Moises Hidardo Hernandez is a fourth-generation coffee farmer and founder of CAFESMO (Cafés Especiales Mercedes Ocotepeque). Inspired by his family’s long coffee-growing history, he has focused on highlighting Honduras as a producer of distinctive specialty coffees rather than commodity-grade coffee.
He operates Finca Cascaritas together with his mother, a third-generation coffee farmer. The 3.5-hectare farm sits between 1,230–1,300 MASL and grows varieties including Parainema, Bourbon, and Obata among native pine and shade trees.
CAFESMO is a collective of more than 250 smallholder farmers in western Honduras near the borders of Guatemala and El Salvador. The region’s mountainous terrain and diverse microclimates support the production of high-quality coffees such as Parainema, Pacas, Catuaí, Obatá, and IHCAFE90.
All coffees are processed at CAFESMO’s centralized facility, which includes a wet mill, drying patios, a dry mill, and a cupping lab to ensure quality and consistency.
