This coffee comes from the Gayo Highlands of Aceh, Sumatra, one of Indonesia’s most renowned Arabica-growing regions. The farms are located around the highland valleys of Ratawali and Atu Lintang, near Takengon, where coffee is cultivated at approximately 1,500–1,800 meters above sea level.

The high elevation, cool mountain climate, fertile soils, and unique landscape surrounding the Gayo Highlands create ideal conditions for slow cherry development. These conditions help the coffee develop greater sweetness, acidity, and complexity in the cup.

Coffee cultivation in the area has a long history, with the Degayo family having been involved in coffee farming around Takengon for generations. Alongside its own family farms, Degayo works with local smallholder farmers in the surrounding communities, creating a network of producers who contribute to the region's coffee production.

For this lot, the carefully selected Arabica cherries undergo an extended fermentation process, allowing additional time for the development of distinctive flavors before drying and further processing.

The result is a characterful Gayo coffee with notes of red berries, roasted almond, and dark chocolate—combining the vibrant fruit character of high-altitude Arabica with the rich, nutty profile traditionally associated with Gayo coffee.
