This Red & Yellow Caturra is one of the flagship coffees produced at EL VERGEL, located in the microlot next to the washing station and surrounded by Guava trees; this coffee profile has been one of the most intense brutal coffees developed by the estate.
This particular lot comes from the plantation of forty thousand trees that have been planted in 2016 & 2018. This lot has been one of the best of the estate to experiment with processing bigger lots.
This coffee was processed with a unique method that consists of a special 2 step anaerobic fermentation. It helped develop an intense but clean profile, where the processing does not cover the unique variety attributes but accomplished. To achieve a clean, sweet cup and extend the shelf life, coffee was sun-dried for 20-25 days.
