Before 2001 in Costa Rica, all producers delivered their cherries to large industrial cooperatives. They mastered the agricultural part of the chain but after the harvest, they lost all control over their production. After 2001, things change. Two precursors, the finca La Candelia and the Barrantes Family (Cafetalera Herbazu) built a micro mill, the first independent in Costa Rica. They thus open the way to more independence for producers because they can finally transform their productions themselves. Cordillera del Fuego is the name of this independent micro mill, located in the West Valley, Tarrazu area. This private beneficio, managed by 2 associates, produces approximately 8000 bags/year. Luis Campos was the pioneer of new coffee preparation processes. Even though today anaerobic and thermal processes are on the rise, at the time, embarking on this new path represented a major risk taking because this type of coffee was brand new on the market.
Luis Campos supports producers in these preparation methods within the beneficio Cordillera del Fuego for highly differentiating coffees. This represents approximately 25 batches/year.
WHAT IS ANAEROBIC FERMENTATION?
Anaerobic fermentation consists of placing the cherries in hermetically sealed barrels in a cool place for 2 or 3 days. Then the cherries are left to dry on patios for 2 or 3 weeks.

- We deliver our products to all of UAE. Shipping will be done by a third-party courier (Emirates Post).
- All orders are processed within 1-3 business days, and orders are not shipped or delivered on weekends or holidays.
- Daily Cut-Off Time will be at 05:00 PM - Dubai Time. Orders placed after the cut-off time and/or on any UAE public holiday will be placed on the first day following the date the Order was submitted.
- UAE Delivery Fees will be mentioned on the checkout page. Free Delivery on Orders 150+ AED
- Orders of less than AED 150 will be charged AED 15 shipping fee (non-refundable) in case of any cancelation.
- Avoid any delivery delay by providing your full address and contact details.
- Falconroasters.com is not responsible for any customs and taxes applied to Your Order. All fees imposed during or after shipping are the responsibility of the customer (tariffs, taxes)
- Cash on Delivery (COD) in UAE only with a maximum amount of 3,000 AED
International Shipping
- We offer international shipping to GCC countries only. Shipping will be done by a third-party courier (Emirates Post).
- Shipping charges for your order will be calculated and displayed at checkout.
- Your order may be subject to import duties and taxes (including VAT), which are incurred once a shipment reaches your destination country. Falcon Coffee Roasters is not responsible for these charges if they are applied and are your responsibility as the customer.
- All orders are processed within 3-7 business days, and orders are not shipped or delivered on weekends or holidays.
