This coffee comes to us from the villages of Bensa (Subregion - Bombe), which belongs to the Sidama / Sidamo zone, South Ethiopia bordering Kenya. Anaerobic natural or dry-processed coffees are a form of fruit-dried/natural-processed coffee that uses techniques and elements long used by winemakers. The process removes excess oxygen by introducing Co2 into the processing environment.
Notes From the producer, Kebir Coffee, on the 90-Hour Carbonic maceration:
A 90-hour carbonic maceration process is considered relatively long compared to other durations used in coffee processing. The extended fermentation period allows for more significant complex flavours and aroma development. Over this timeframe, the CO2-rich environment helps to intensify the flavours present in the cherry, resulting in a more pronounced and distinctive taste profile.
The Sidamo Bensa bomba G1, through a 90-hour carbonic maceration process, exhibits a range of fruity notes, such as berries, tropical fruits, and stone fruits. The extended fermentation also contributes to a higher sweetness level, giving the coffee a delightful, lingering sweetness that balances well with the acidity. The mouthfeel is often described as smooth and velvety, enhancing the overall sensory experience of the coffee.
Effects of Carbonic Maceration on Coffee Cherry:
During carbonic maceration, several changes occur within the coffee cherry. Firstly, the CO2 present in the sealed containers triggers anaerobic fermentation. This process encourages the breakdown of sugars and other organic compounds within the cherry, developing distinct flavour characteristics. Additionally, the elevated carbon dioxide levels inhibit the growth of certain microorganisms, reducing the risk of spoilage and encouraging the development of desirable microbes.

- Orders of less than AED 150 will be charged AED 15 shipping fee (non-refundable) in case of any cancelation.
