Baru Black Mountain is located in the north of Panama, in the province of Chiriqui, close to the National Park "La Amistad", classified as a World Heritage Site by UNESCO. With its 1400masl of altitude, the Baru Volcano overlooks this national park and represents the highest point in the country. It is precisely the very dark volcanic soil of the region that inspired the farm's name. The environment, natural shading via century-old trees, mineral-rich soil and streams add to the ideal coffee growing conditions.
Baru Black Mountain Farm is committed to producing with respect for the environment, particularly by using water from streams to wash harvested cherries and respect workers. The latter thus provide their families with medical and pedagogical aids.
We sourced an amazing, natural processed lot from Baru Black Mountain this year. After being picked at maturity, cherries have been dried on African beds in a place that provides excellent ventilation and sufficient exposure to sunlight. The coffee is dried thin layer and turned over several times a day. Every evening, the cherries are covered with protection to prevent moisture from penetrating the cherry. This process took about one month. An innovative method of preparation that makes it possible to obtain the sweetness so characteristic of this balanced coffee with great aromatic complexity.
